Cuba's largest and oldest carnival takes place each year in the last week of July in Santiago de Cuba, reaching its peak around July 25 and 26, dates that coincide with the Catholic feast of Santiago Apostol, the city's patron saint, and the anniversary of the 1953 Moncada Barracks attack. The carnival traces its roots to the seventeenth century, when Santiago's summer and winter mamarrachos celebrations marked the end of the sugar harvest, and over time it absorbed Afro-Cuban religious and musical traditions brought by enslaved people who worked the sugar plantations of Cuba's eastern Oriente region.

The carnival is best known for its comparsas, organized groups that parade through the streets in elaborate costumes accompanied by conga lines, drumming, and live orchestras. Musical forms with origins in Santiago de Cuba, including conga, rumba, and son, the ancestor of modern salsa, remain central to the celebration and reflect the broader blending of Spanish and African cultural influences found throughout eastern Cuba.

A different kind of festival takes place each December in the central Cuban town of Remedios, where the Parrandas de Remedios runs from December 16 to 24. According to local tradition, the celebration began in 1820, when a priest had children make noise in the streets to draw townspeople to evening Mass; it later grew into a rivalry between two neighborhood groups, the Carmelitas and the Sansaries, who each build elaborate illuminated floats and structures in secret before competing in a nightly display of fireworks and music. UNESCO added the Parrandas to its Intangible Cultural Heritage list in 2018, recognizing a tradition that, like Santiago's carnival, reflects Cuba's rich regional festival culture.
